A few salmon recipes

Scotch Salmon           
12 servings
7 oz Salmon Fillets 
2 tb Butter, clarified 
Salt & White pepper to taste 
1/2 ts Garlic, minced 
1/2 ts Shallot, minced 
1/4 ts Dijon Mustard 
1/4 ts Brown sugar 
1 tb Raspberry vinger 
1/4 c Scotch 
1/4 c Orange juice 
1/4 c Heavy cream 
3 tb Drambuie 
Creme fraiche 
Candied Orange Zest 3 cups 
Dust a 6-7 ounce salmon filet lightly in flour. In a pan, heat 2 Tbs. clarified butter and brown slightly on one side. 

Add salt and white pepper to taste and turn fillet over. 

Add 1/2 tsp. minced garlic, 1/2 tsp. minced shallot, 1/4 tsp. Dijon mustard and 1/4 tsp. brown sugar. 

After these cook for a few seconds, add 1 Tablespoon raspberry vinegar. 

With the fillet still in the pan, deglaze it with a "round" of Scotch about 1/4 c. Add 1/4 c. orange juice. 

Move pan in a circular motion to blend ingredients. 

Reduce sauce till it begins to thicken. Finish with 1/4 c. heavy cream and a round of Drambuie about 3 Tablespoons. 

Garnish with creme fraiche and candied orange zest. 

 

Dishwasher Salmon
salmon fillets 
aluminum foil 
a lemon 
a few butter pats 
electric dishwasher 
Place the fish on two large sheets of aluminum foil. 

Squeeze on some lemon juice and place the pats of butter on the salmon fillets. 

Seal the fillets well in the foil, and place the foil packet in the top wire basket of your electric dishwasher. 

DO NOT ADD SOAP OR DETERGENT. 

Close the dishwasher door, set the dishwasher on the hottest wash cycle, complete with drying cycle, and let it run through a full cycle. 

When the cycle is complete the fish will be cooked just right. 


 

 

 

 

Pesto salmon with pan roasted potatoes
2/3 lb (2 medium) potatoes cut into 1-inch chunks

2 Salmon steaks (6 to 8 ounces each)

2 tb Prepared pesto (thawed if frozen)

1 tb Olive oil

2 Garlic cloves; minced

Salt and pepper; to taste

 

Heat oven to 400 degrees.

Place potatoes in shallow 1-quart microwave-safe dish.

Cover with plastic wrap, venting one corner.

Microwave on HIGH 6 minutes until just tender.

Meanwhile, spread top of each salmon steak with pesto, dividing equally.

Place on rimmed baking sheet.

Bake until salmon is opaque throughout, 15 to 20 minutes.

While salmon bakes, in medium nonstick skillet over high heat combine oil and garlic.

Add potatoes. Pan  roast, tossing, 5 to 8 minutes, until golden brown.

Season with salt and pepper.

Serve salmon with potatoes.

NOTE: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven.

 

 

 

Teriyaki salmon steaks
1 c Teriyaki sauce 
1 tb Peanut oil 
3 tb Parsley [chopped] 
1 Clove garlic [crushed] 
1/2 ts Pepper [freshly ground] 
6 Salmon Steaks 

Mix the first 5 ingredients in a bowl, then add the salmon steaks and let sand for 1 to 2 hours, turning the steaks every 20 to 30 min. 

Place the steaks on a sheet of heavy foil. 

Grill for 4 to 5 min. basting with the sauce. 

Turn the steaks and grill for 3 min. or until the steaks flake easily, basting with the sauce. 

Serve hot or cold.
