The Mahi mahi also known as common dolphin-fish or dorado, are surface-dwelling ray-finned fish found in off-shore tropical and subtropical waters worldwide.

Here are a few grilled mahi mahi recipes.

Grilled mahi-mahi recipe # 1


Lime-Mint Grilled mahi mahi  recipe
2 limes freshly squeezed
1 tbsp. olive oil
2 tbsp. soy sauce
2 med. cloves garlic, minced or pressed
1/4 c. dry white wine
2 tbsp. fresh mint leaves
1 1/2 inch thick fish fillets mahi-mahi

Make the marinade by combining all of the ingredients, except for the fish, in a bowl. Score the fish skin and place the fillets in a shallow dish just large enough to hold them.

Pour the marinade over fish and turn it, completely coating both sides of the fish. Marinate in the refrigerator for 2 hours, turning several times and brushing marinade over the tops of the fillets.

Grill the fillets over a medium hot fire, 8-10 minutes per side, basting before you turn.

Grilled Mahi-Mahi with Habanero Mango Salsa  Recipe # 2

SERVES 4

Ingredients:

4 (7 ounce) Mahi mahi fillets
1 tablespoon kosher salt
2 tablespoons cracked black pepper Salsa
2 cups mangoes, peeled and cubed
1/2 cup sweet kernel corn
1/2 lime, juiced
1/2 lemon, juiced
1/2 cup grape tomatoes, quartered
2 teaspoons olive oil
1 habanera pepper, seeded and finely chopped
1/4 cup chopped fresh cilantro
1 teaspoon salt
1 teaspoon pepper

Directions

Mix all of the salsa ingredients in together, except mango.  
Cover and chill overnight.
Grill Mahi Mahi on a hot grill, 5 min on each side and season with
salt and cracked pepper.
Add mango to salsa just before serving and mix well.
Pour salsa on Mahi Mahi steaks and serve.

Grilled Mahi-mahi with Pineapple Rum Glaze Recipe # 3

2 tablespoons butter
1 small red onion, diced
2 shallots, chopped
2 cloves garlic, minced
1/2 cup grilled pineapple, diced small
1/4 cup honey
3 ounces dark rum
1/2 cup pineapple juice
 green onions, chopped
4 (8 ounces each) Mahi-mahi filets, boneless and skinless
lemon or lime pepper, to taste
3 tablespoons olive oil

Preparation:

In a saucepot over medium heat, add the butter, red onion, shallots and garlic. Cook for 3 minutes until the onions are soft, but not brown. Add the grilled pineapple, honey, dark rum, pineapple juice and green onions. Bring to a boil, remove from heat and set aside.

Season to taste with salt and pepper.

Preheat grill to medium high.

Place the Mahi-mahi on a flat surface and rub with seasoning, pressing the spice gently into the meat. Brush lightly with olive oil. Grill for three to four minutes per side, glazing liberally with pineapple glazing syrup until the fish is just cooked through, tender and flakes lightly.

Grilled Mahi Mahi with Lemon and Caper Dressing Recipe  # 4

Servings: 4

Ingredients:

-   2 lemons 
-   4 tablespoons olive oil 
-   1 tablespoon capers - drained 
-   1 tablespoon green onion - finely chopped  salt and pepper to taste 
-   4 mahi mahi fillets 
-   4 tablespoons olive oil 
-   2 teaspoons lemon pepper 
-   2 teaspoons dried dill or 1 tablespoons of fresh chopped dill 

Container: small mixing bowl, grill

Serving Description: 1 fillet

Prep Time: 15 minutes

Cook Time: 10 minutes

Directions

Cut off the ends of each lemon, and then cut each lemon in half.

Lightly brush the cut sides of the lemons with oil.

Grill the lemons on high heat until nicely browned, 4-5 minutes turning once.

Remove from the grill and allow the lemons to cool.

Squeeze the lemons through a sieve into a small bowl.

Use the back side of a spoon to push the juices through the sieve.

You will have approximately 1-2 tablespoons of juice.

Add the capers and whisk in 3 tablespoons of oil to form a dressing.

Whisk in the green onion, salt and pepper.

Brush both sides of the fillets with olive oil.

Sprinkle lemon pepper over each and then the dill.

Place skin side down on the grill over medium heat.

Close the cover and grill until the fish flakes when pierced with a fork, approximately 8-10 minutes.

Don't flip the fillets unless you are using skinless fillets.

Remove from grill, whisk the dressing once more, then serve over each fillet.

They are one of only two members of the Coryphaenidae family, the other being the Pompano dolphinfish. Although, while technically incorrect, it is also common to refer to the mahi-mahi simply as dolphin, rather than dolphinfish.
