A few low carbohydrate recipes

Baked Ham with Cucumber
1 T unsalted butter 
4 large mushrooms, sliced thinly 
1 cucumber, peeled, seeded and sliced thin crosswise (1 1/2 cups) 
2 t finely chopped fresh tarragon + sprigs for garnish 
2 T heavy cream 
1/4 t dijon-style mustard 
3/4 lb ham steak, trimmed 
In a skillet, melt butter over moderate heat until foam subsides. In it cook mushrooms, stirring, until they begin to give off their liquid. Add cucumbers and cook, stirring, 3-5 minutes, or until cucumber is slightly softened. Stir in chopped tarragon, cream, and mustard, and cook until thickened slightly. 

Put ham in a baking dish and spread with cucumber mixture. Bake in the middle of a preheated 350-degree oven for 10 minutes, or until heated through.  




 

Easy Buffalo Wings 
2-1/2 lbs. chicken wings 
3 Tbs. vegetable oil 
Tbs. unsalted butter, melted 
1 tsp. hot red pepper sauce, or to taste 1g 
sweetener to taste 
Cut wings in half through the joint and discard wing tips. 

Season chicken with salt and pepper to taste. Heat oil in a heavy nonstick pan over medium high heat. 

Fry chicken 10-12 minutes in hot oil, turning occasionally, until skin is crisp and golden. 

Remove from oil and drain on paper towels before transferring to a platter. 

Combine melted butter and pepper sauce in a bowl. Pour over wings and toss to coat. 







Tuna Casserole
1 ea Onion Soup Mix 8 g 
1/2 c Cream 5 g 
1 c Water 
10 oz Frozen Cauliflower and Broccoli 10 g 
6 1/2 oz Tuna, Drained & Flaked 
4 oz Shredded Cheddar Cheese 1 g 

 

Preheat oven to 350 degrees F. In large bowl, blend golden onion recipe soup mix with cream and water; stir in tuna. 

Turn into greased 2-quart oblong baking dish, then top with cheese. 

Bake 20 minutes or until bubbling. 

Parmesan Chicken
2 pounds boneless chicken breast 
2 tb nelted butter 
2 oz. grated Parmesan cheese 2 g 
1/4 cup grounded almonds 4g 
1 tb dried oregano leaves 
1 tb dried parsley 
1/4 ts paprika 
1/4 ts pepper 
1/2 ts salt 

 

 

Heat oven to 400 F. Spray a baking pan with no stick cooking spray. 

Dip chicken in butter; coat with combined remaining ingredients. 

Place in prepared pan.

Bake 20 to 25 minutes or until tender

Grilled Portabella Mushrooms
1 Package Portabella Mushroom Caps 
1/4 Cup Olive Oil 
2 Tablespoons Balsamic Vinegar 
1 Whole Shallot -- finely chopped 
1 Clove Garlic -- finely chopped 
1. Remove stems and wipe caps clean with a damp paper towel.
2. Combine oil, vinegar, shallots and garlic.
3. Turn mushrooms on their backs, with dark "gill" side up. Spoon dressing over gills.
4. Grill on rack over hot coals, gill sides up, for 4 minutes. Slice and serve.
