 Injectable marinade recipes make ordinary cuts of meat taste extraordinary.

Marinating, is the process of soaking foods in a seasoned, usually acidic, liquid for several hours or more before cooking. The liquid marinade can be acidic with ingredients like vinegar, lemon juice, wine, or soy sauce, brine or other prepared sauces. A marinade usually contains oils, herbs, and spices to further flavor the food items.

The acid in the marinade breaks down the tissue in the meat, allowing more liquid to be absorbed and producing a juicer cut of meat.

The American Institute for Cancer Research recommends discarding used marinade that has been applied to raw meats. Meats, such as red meat, fish, and chicken, may contain unhealthful substances which may enter the marinade, according to health experts attributed by the AICR.

There is no shortage of commercially available injectable marinades available at the supermarket or gourmet shops.

Beware of the metal injector needles, they seem to break and bend rather easily. The plastic needles are more flexible and durable.  They are also cheaper.

Here are the injectable marinade recipe

Recipe # 1 Turkey

Injectable marinade recipe.

Ingredients:
3 tablespoons melted butter
1/3 cup maple syrup
1 tablespoon Worcestershire sauce
2/3 cup chicken stock
3 tablespoons lemon juice
1 tablespoon garlic power
2 teaspoons onion powder
1/2 teaspoon salt
1 teaspoon finely ground black pepper
1 teaspoon Tabasco, or to taste (optional)
 
Instructions:  Makes plenty of marinade to inject an 8-15 pound turkey.

Mix all ingredients together in a small saucepan over medium heat until all ingredients are dissolved and well blended. Let cool to room temperature before injecting in the turkey. Before putting the marinade in the injector, whisk the mixture well to emulsify all the ingredients together.

Recipe # 2 Onion

Injectable marinade recipe

2 lg Onions; quartered
2 ts Garlic salt
12 oz Budweiser
1 tb Sugar
2 ts Chipotle powder

Instructions for Onion injectable marinade recipe.

Puree ingredients and pour into a container, cover and let sit overnight. Strain before you inject it.

Marinade recipe # 3

2 tablespoon Lea & Perrins Worcestershire
1 tablespoon crab boil
1/4 cup apple cider
3/4 cup honey
1 bottled beer
1 tablespoon salt
1 tablespoon allspice
1/2 cup essence or Creole spice
1/4 teaspoon cayenne
pinch of clove

Puree in food processor to make the marinade

Recipe # 4

Injectable marinade recipe # 4

Ingredients:

2 tablespoons kosher salt (regular salt will clog your injector)
2 teaspoons garlic powder
2 teaspoons white pepper (Black pepper will clog your injectable)
2 teaspoons cayenne pepper
1/2 teaspoon onion powder
2 cups melted butter

Directions:

Melt butter slowly as not to burn.

Add rest of ingredients and mix well.

Place marinade in a covered bowl and shake vigorously
