Pasta with Meat Sauce (Makes 4 servings)

1-pound lean hamburger meat and 1 medium chopped onion, browned.
1 can (14.5 ounces) regular or no-salt added diced tomatoes
1 can (8 ounces) regular or no-salt added tomato sauce
1 teaspoon Italian seasoning
1/4 teaspoon powdered garlic or 1 small clove garlic, minced
1/4 teaspoon ground black pepper
Salt (optional, according to taste)
8 ounces of pasta (macaroni, spaghetti, etc.)
Place all ingredients, EXCEPT pasta, in a saucepan and simmer, covered, over low heat until meat is thawed and heated throughout, about 20 to 30 minutes; simmering also allows flavors to develop. Stir occasionally. Add more water if the mixture becomes too thick.

While meat sauce is simmering, prepare 8 ounces of pasta (macaroni, spaghetti, noodles, etc.) according to package directions.

Drain pasta; serve topped with meat sauce or mix pasta together with meat sauce before serving. There is the first answer to the question "what can I make with hamburger meat?"
 

Sweet-N-Sour Swedish Meat Balls


SERVES 12

Ingredients:
1 lb lean hamburger meat
1/2 cup breadcrumbs
3 eggs, beaten
1/2 cup grated parmesan cheese
garlic powder, to taste
salt, to taste
pepper
8 ounces sour cream
1/2 cup A-1 Steak Sauce
1/2 cup ketchup
6 tablespoons brown sugar
1/2 cup oleo
Directions:

Combine first 5 ingredients in large bowl by hand. Form golf ball sized meatballs (cocktail sized). Put in frying pan with extra virgin olive oil and brown.
Drain all meatballs on paper towel.
While cooking meatballs in batches, start making the sauce. In a pot combine all but the sour cream. Simmer low for 20 minutes. Once the brown sugar dissolves add sour cream.
Add meatballs once sour cream is blended into sauce. Simmer low with all meatballs about 30-45minutes or crock pot low for 4 hours.

Ingredients:
1 tablespoon dried ancho chile powder
2 tablespoons chili powder
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon dried oregano
1/4 teaspoon nutmeg, grated
1 teaspoon brown sugar
1 tablespoon kosher salt
2 teaspoons black pepper
2 medium onions, diced
6 garlic cloves, chopped
1 jalapeno, chopped
3 lbs ground beef
5 chipotle peppers, with some of the adobo sauce, chopped (from a can)
2 (28 ounce) cans whole tomatoes with juice
3 tablespoons tomato paste, hand crushed
2 (15 1/2 ounce) cans white great northern beans, drained and rinsed well
1/4 cup yellow cornmeal
3 cups cheddar cheese, grated
saltine crackers
Directions:

Mix the first nine ingredients together to make the spice mix.
Chop the onion, garlic and jalapeno.
Brown the ground beef in a large, heavy bottomed pot in two batches as instructed below.
To each batch of beef, add one half of the spice mix, 1 chopped onion, 1/2 of the chopped garlic and 1/2 of the chopped jalapeno while browning.
Combine the two batches of meat and add the chipotle peppers, crushed tomatoes and their juice and tomato paste.
Simmer for two hours, stirring occasionally.
Taste for seasoning and adjust to your taste.
Gently stir in the beans and cornmeal.
Simmer for one more hour, stirring once or twice.
Serve with grated cheese and crackers.

Traditional 1950s style meat loaf recipe for hamburger meat

Prep Time: 15 minutes
Cook Time: 1 hours,
Ingredients:
1-1/2 pounds hamburger
1/2 pound ground pork sausage
2 eggs, lightly beaten
1 cup fine bread crumbs
1 large clove of garlic, pressed
1/2 cup minced sweet onion
1/4 cup minced green bell pepper
1 tsp dried oregano, crushed
1 teaspoon kosher salt
Freshly ground pepper to taste
1 Tbsp Worcestershire sauce
1 package dry Lipton's Onion Soup mix
1/2 cup milk
1 (6-ounce) can tomato paste, divided use
2 to 4 strips bacon, cut in half (optional)
Preparation:
Preheat oven to 350 degrees.

Combine hamburger, pork sausage, eggs, bread crumbs, garlic, sweet onion, bell pepper, oregano, kosher salt, pepper, Worcestershire sauce, onion soup mix, milk, and half of the tomato paste. Gently mix only until combined. Do not overwork the meat or it will become tough. Form into a loaf. Cover with the remaining half can of tomato paste. Weave the bacon strips over the top.

Bake 1 hour. Let meatloaf rest 15 minutes before cutting to serve.

Yield: 6 servings
