Mushroom Meat Loaf

1 3-ounce can broiled chopped mushrooms.

Milk

1 slightly beaten egg

1-1/2  teaspoons Worcestershire sauce

1 teaspoon salt

1/2 teaspoon dry mustard

Dash Pepper

1-1/2 cups soft bread crumbs

1-1/2 pounds lean ground beef

2 tablespoons catsup

1 tablespoon light corn syrup

Broiled mushroom crowns

Pimiento strips

 

Drain the chopped ,mushrooms, reserving liquid. Add enough milk to mushroom liquid to make 1/2 cup. In mixing bowl, combine liquid, egg, Worcestershire sauce, seasonings, and bread crumbs. Let stand about 5 minutes.

Stir in beef and chopped mushrooms; mix lightly but thoroughly.

Shape into loaf in 13x9x2-inch baking dish. Bake in moderate oven (350 F) 1 hour.

Combine catsup and corn syrup; brush on meat loaf. Bake 15 minutes more. Garnish with mushroom crowns topped with pimento spirals. Makes 6 servings.

Bologna-Style Meat Loaf

3 slices white bread

1/2 cup breadcrumbs

1/4 cup olive oil

1 medium onion, chopped

1 carrot, chopped

1 tablespoon chopped parsley

1/2 cup milk

2 lbs. chopped beef

2 eggs, lightly beaten

1/2 lb. pancetta, finely chopped*

1/3 to 1/2 cup freshly grated parmesan cheese

1/2 cup dry white wine

1-1/2 to 2 cups canned crushed Italian-Style tomatoes.

1/2 teaspoon freshly grated nutmeg

Salt and freshly ground pepper to taste

Preheat oven to 375F. Remove crust from bread. Tear bread into pieces. Combine bread and milk in a small bowl and squeeze together into a soft pulp. In a large bowl, combine beef, bread-milk mixture, egg, pancetta, Parmesan cheese, nutmeg, and salt and pepper/ Mix thoroughly. Shape mixture into a large flat sausage about 10 inches long and 3 inches thick. Coat meat loaf with breadcrumbs, pressing crumbs into meat lightly.. Heat oil in a medium casserole. Add onion, carrot, celery and parsley. Sauté over medium heat until onion is pale yellow. Add meat loaf. Bake 20 to 25 minutes or until meat loaf is light golden. Add wine. Bake 10 minutes longer, basting meat loaf with tomato sauce a few times during cooking. Cool meat loaf 5 to 10 minutes before slicing. Serve with 1 or 2 tablespoons sauce over each serving. Makes 6 servings.

* Pancetta.

Pancetta is the same cut of pork as bacon. It is cured with salt and is not smoked. It comes rolled up like a large salami. Widely used in Italian cooking, especially in Emilia-Romagna, it is vital to many dishes. If available, buy a  large quantity, cut into several pieces and freeze it. You can substitute domestic bacon for pancetta. It must be blanched in boiling water for two to three minutes to reduce the smoky flavor. Fresh side pork can also  be used.

Turkish Meat Loaf

1 lb. lean ground lamb

1/2 pound lean ground pork

1/2 pound ground veal

2 eggs beaten

2 thin slices white bread soaked in milk, with most of the liquid squeezed out

1 tablespoon olive oil

1 medium onion, minced

1 garlic clove, minced

2 tablespoons pignoli, lightly browned in 1 tablespoon olive oil

1 teaspoon ground allspice

2 tablespoons chopped fresh dill, or 2 teaspoons dried

1-1/2 teaspoons freshly ground black pepper

3 or 4 slices bacon

1. In a bowl, combine and blend well, but lightly, all the ingredients except the bacon.

2. Form into a loaf. Set in a lightly greased pan. Arrange the bacon slices on top and bake, uncovered, in a preheated 350 F oven for 1 hour, or until thoroughly cooked, basting from time to time with drippings from the bacon.
